  2. Prepare 2 kg minced pork (1kg pork belly 1kg half fat)

  6. Prepare 100 g shallots
  7. Make ready 5 carrots
  8. Get 750 g water chestnuts cubed

  13. Take 1 tbsp corn flour
Instructions to make Hei Cho:
  1. Mince garlic and shallots in food processor. Add prawns. Add 1 tsp salt.
  2. Hand mix with minced pork and fish paste. Set Astaire.
  3. Soak cul fat. Set aside.
  4. Slice liver into strips. Add 1 tbsp corn flour, mix thoroughly. Rinse off corn flour.
  5. Cut leeks into thin slices and mix into pork mixture.
  6. Spread out cul fat thinly. Dab dry. Add pork paste, line with cubes of water chestnut and a slice of liver.
  7. Steam for 10 to 15 minutes.
