  9. Preheat oven to 450 degrees and take your roast out of you fridge and let it sit out for the last 1/2 hour of the marinating process.
  10. Place the roast fat side up on a sheet pan with a rack. If you have a leave thermometer insert into the middle of the roast and set it to 150 degrees. Now the browning process Place the roast in the center of your oven with the oven rack in the middle position and roast at 450 degrees for 25-30 mins checking at the 15 min mark for nice color don't want to burn it.
  11. Now reduce the heat of your oven to 275 degrees and bake for about an hour or so untill you reach 150 -155 degrees. If not using a leave in thermometer check with a instant read thermometer at the 45 mins mark. At this temperature it's about 8-10 mins per every 10 degrees so plan your sides accordingly.
