Put a pan or wok over high heat and add the oil. Add the ginger and let it sizzle until lightly brown. A healthy recipe using the amaranthus stem. A giod side dish for chapati and rice.
Steps to make Fresh Amaranthus stem fry:
- Wash and Chop green stems into small pieces. Drain water. Add oil into pan. Add kalonji and red chilli. Add garlic, green chillies and onion. Saute until onion soft.
- Add chopped stems. Add salt, sugar, turmeric powder, ginger paste. Saute in low flame until the green soft and smashed.
- Add kasundi. Mix well and cook until the green dry.
Remove the amaranth leaves from the stems. Rinse the leaves thoroughly under water in a colander, drain. (In this recipe I'm not cooking the stems.
