Veg Biryani is a delicious medley of rice, vegetables and a variety of spices. Compared to the other varieties of rice dishes like Pulao, Biryani has a stronger taste of curried rice due to a higher amount. Veg biryani recipe - For making vegetable dum biryani, basmati rice and vegetable gravy are partially cooked separately first. Then both are assembled in the layers with the topping of nuts, fried onions.
Steps to make Veg. Tagdi biryani:
- Boil soya chunks with sufficient water till tender. Remove from heat and wash them with water and squeezed. In a grinder add soya chunks,chopped onion,2 green chilly,5-6garic cloves-garlic,pepper corn and 1/2tsp cumin seed.grind and make a paste. Keep it in a bowl.
- Now add in 1 tsp cornflour and 2 tsp all purpose flour. Mix well and keep aside.
- To make a bone of tagdi.in a bowl add remaining all purpose flour,1 tsp oil and 1/2 tsp salt and mix everything well. Add sufficient water and knead a semi soft dough like mathri.
- Now roll it into length wise and make a long thin roll.now cut it into small pieces. Heat sufficient oil in a pan for frying and fry all prepared small long pieces. Fry on low flame till it becomes golden brown in colour from both the sides. Remove from heat and cool down.
- Fry chopped onion in this hot oil till its crispy and keep aside.
- Now wrap the prepared soya mixture on fried tagdi and give it to shape of tagdi.prepare all veg. Tagdi like this. Drop it in hot oil and fry.fry all till it becomes golden brown in colour and crispy. You can also eat it as a snacks if you want
- It looks like this. To prepare biryani first wash the rice.add it in a pan with 1 bay leaf,2 cloves,1 green cardamom and required amount of water and keep it on gas stove and cook.cook the rice half and drain it.keep aside.
- Now heat1 1/2 tsp ghee in a pan.add bay leaf,flower chakri,cinnamon and cardamom and saute.add onion and tomato paste and cook.add ginger garlic paste and cook.add biryani masala and salt to taste. Cook on low flame till masala release the ghee.
- Add milk and mix.when the milk comes to boil reduce the flame and apply a layer of half cooked rice.keep fried soya tagdi on it and then keep layer of fried onion. Sprinkle some biryani masala over it than add remaining ghee.
- Again apply a layer of rice on it.add orange colour, rose water and kewra essence. Cover and cook it for another 10 minutes for dum.
- After 10 minutes open the lid and garnish with mint leaves and serve hot veg. Tagdi biryani with garlic curd.
Garnish with dry fruits and green coriander leaves. Serve the vegetable (veg ) biryani hot with raita and pickle. Vegetable Biryani is a rich and exotic rice dish with spicy vegetables.
