- Heat 1tbsp oil in a pan add chopped vegetables and cook till tender add soaked and drained soya chunks cook fir few more time.add salt,red chilli powder and 1tsp biryani masala.switch off the gas.kerp it cool.
- Add heated curd and mix well keep aside.
- Now mix all ingredients of dough and knead it a firm dough.kerp aside for 20 minutes.Take a big ball of dough and flatten it in a thick but big chapati.
- Grease oil ina oven proof dish,sprinkle kalonji seeds. Put the chapati on it and set with light hands in the dish.
- Now on the bottom first spread fried cashews,than spread vegetable mix and than layer rice.Spread brown onion layer.
- Spread mint leaves on it and again repeat the layer in same process.sprinkle salt and,biryani masala.
- Now add.saffron in milk and spread it on the top.sprinkle desi ghee,essence, colour and lastly stretch the edges of dough and close it in center.1. Now grease with little oil sprinkle kalonji over it.bake it in preheated oven at 180° till golden in colour on top.in this quantity I have make 2 one small and one big,y can make one big only depend on size of mould.1. After browning give rest for 2 minutes and than de mould it carefully.cut carefully and ready to serve with raita.parda is also eaten as naan,so it's a complete meal to enjoy.
The biryani is going to be very hot so be careful while cutting the parda. Take a sharp knife and rotate it around the edges of the bowl to cut the parda on the biryani. The roti can be enjoyed with Raita or pickle. It can also serve as a spoon.
