- Trim meat and cut into even pieces blanch and refresh.
- In a saucepan cover with water and bring to boil.Season with salt and pepper for about an hour simmering before adding any vegetable.
- Add parsley, leeks,bay leaves tied with a kitchen string and add potatoes and onions having been cut into tiny pieces let it simmer for 30mins untill well cooked
- Correct seasoning and skim of the fat
- Serve sprinkled with chopped parsley and enjoy.
